Ingredients

120g plain flour

140g caster sugar
1.5 tsp baking powder
A pinch of salt
40g unsalted butter, softened
120ml milk (whole milk if possible)
1 egg, large
¼ tsp vanilla extract

For the vanilla frosting

250g icing /confectioners sugar
80g butter
25ml milk
A few drops of vanilla extract

​

Extra Echo Additions!

Juicy fresh strawberries

Blue sprinkles and/or blue chocolate beads

Echo's
Easy Peasy Cupcakes

Let’s get started!

First, put on your favourite apron and roll up your sleeves!

And of course, don’t forget to wash your hands!

Great! You’re ready to create one of Echo’s tasty bakes!

 

Ask an adult to please preheat your oven to 170ºc while you line a muffin tin with paper cupcake cases.

LET'S MIX UP THE DRY INGREDIENTS

Measure the flour and caster sugar carefully

Add them to a large mixing bowl or you can use freestanding mixer.

Now add the baking powder and salt.

Next add the butter into the flour and sugar.

Using your mixer/ handheld mixer or your fingers, mix it all together!

Until the yummy mix becomes a lovely ‘bread-crumby’ texture.

NOW IT'S TIME TO ADD THE WET INGREDIENTS

Measure the milk either with a measuring jug or with digital scales set to the ‘ml’ setting.

Ask an adult to help if it’s all a bit too sloppy!

Pour the milk into your mixing bowl.

Add the egg. Crack it carefully in a separate bowl, taking any naughty bits of loose shell out first.

Add to your mixing bowl!

And now for the fragrant vanilla extract.

I love vanilla!!

MIX IT ALL UP

until you have a nice smooth batter!

FILL UP

the cupcake cases with the gloopy yummy batter until they are about ¾ full.

An ‘Echo baking trick’ is to use an ice cream scoop to do this – that way all the batter ends up in the cupcake case!

IN THE OVEN THEY GO!

Bake the cupcakes in the preheated oven for 12-15 minutes.

When they have risen nicely and turned a beautiful golden brown, you’ll know they’re ready!

To be ‘double sure’ you can use another one of Echo’s baking tricks - a metal skewer!

Poke the skewer into the middle of the cupcake. If it comes out clean, they’re ready to come out!

OUT THEY COME

Your fragrant hot cupcakes should have a nice flat top.

Take them out from the oven and leave to cool in their tray for a few minutes.

Then put them on wire rack to cool down fully.

​

MAKE THE VANILLA FROSTING

Mix the icing sugar, and butter in a large bowl or free-standing mixer.

Go slowly at first as icing sugar likes to try to escape and land everywhere!

Slowly add the milk and a few drops of vanilla extract

Turn the speed of your mixer up and keep mixing for 5 minutes or so.

The longer you mix it the softer and fluffier it becomes.

LET’S DECORATE THOSE CUPCAKES!

Pipe the frosting or use a knife or pallet knife to spread the icing on to your cupcakes

You can personalise and get creative with your cupcakes too!

I love adding a lovely juicy strawberry on top of each one.

Beautiful blue sprinkles or blue chocolate beads also make them the perfect Echo bakes.
